Ingredients
- 1 cup rolled oats
- ¾ cup almond flour
- ¼ cup coconut sugar
- 1 large egg (or flax egg for vegan)
- ¼ cup coconut oil, melted
- ½ tsp baking soda
- ½ tsp vanilla extract
- ½ cup dark chocolate chips (70% cocoa or higher)
- Pinch of sea salt
Instructions
- Preheat oven to 180 °C (350 °F).
- Blend rolled oats into a coarse flour using a blender.
- Mix oat flour, almond flour, coconut sugar, baking soda, and salt in a bowl.
- Whisk egg, melted coconut oil, and vanilla in a separate bowl.
- Combine wet and dry ingredients, then fold in chocolate chips.
- Scoop dough onto a lined baking sheet (makes about 12 cookies. Yum!).
- Bake 10–12 minutes until golden at edges.
- Cool for 5 minutes before transferring to a wire rack.
Tips & Variations
Vegan? Swap the egg for a flax egg (1 tbsp flax + 3 tbsp water).
Nut-free? Replace almond flour with oat flour.
Add a tablespoon of chia seeds or ground flax for extra fiber.
