What goes into our cookies

Every ingredient, and why it's there

Oats

Oats are the backbone of every Maybelle cookie. They give a gentle, toasty flavour and bring fibre from a whole grain rather than a powder. It's the comfort of a bowl of porridge in cookie form.

The Research

The UK's NHS recommends 30g of fibre a day, and most of us fall well short. One of the largest reviews of fibre and whole grains, published in The Lancet, pooled 185 long-term studies and 58 clinical trials. It found the benefits of fibre were greatest at 25–29g a day and supported advice to eat more fibre and whole grains.

Oats contribute to the 6g of fibre in every cookie.

Almonds

Almonds add a soft, buttery depth. They are also one of the richest sources of magnesium in our recipe, and their fat is mostly unsaturated.

The Research

A review of 113 clinical trials involving more than 8,000 adults found that eating nuts regularly (a median of about 45g a day) led to modest reductions in total and LDL cholesterol.

We use Almonds for their flavour and their magnesium.

Chicory root

Chicory root is a natural plant fibre from the root of the chicory plant. It helps us reach 6g of fibre per cookie without piling in more flour or fat.

The Research

In a randomised, placebo-controlled trial, adults with constipation who took 12g of chicory inulin a day for four weeks had more frequent bowel movements than those given a placebo.

We deliberately use a small amount, around 3g or less, because too much of this fibre at once can cause bloating, which is the last thing you want after dinner. The rest of the fibre comes from oats, almonds and chocolate.

Dark Chocolate

We use 100% cacao chocolate, made from nothing but cocoa beans, with no added sugar. It gives deep, proper chocolate flavour, and it's one of the natural sources of the magnesium in every cookie.

The Research

Cocoa is one of nature's richest sources of magnesium. When researchers measured the minerals in chocolates of different cocoa percentages, chocolate with 90% cocoa contained around 250mg of magnesium per 100g, about two-thirds of an adult's daily reference intake. It was also a source of iron and zinc.

We use 100% cacao chocolate, made from nothing but cocoa beans, with no added sugar. Alongside almonds and oats, it's one of the natural sources of the 60mg of magnesium in every cookie.

Dates

Dates are how we sweeten Maybelle without sweeteners or refined sugar syrups. They bring a rich, caramel-like sweetness, and we use them sparingly.

The Research

A clinical study measured five common date varieties and found they all had a low glycaemic index (46–55), in both healthy volunteers and people with type 2 diabetes.

Along with the chocolate, dates are the only source of sugar, keeping each cookie to 3g.

Magnesium

Dates are how we sweeten Maybelle without sweeteners or refined sugar syrups. They bring a rich, caramel-like sweetness, and we use them sparingly.

The Research

Magnesium is involved in over 600 enzyme reactions in the body and plays an important role in the brain, heart and muscles, according to a major review in Physiological Reviews.

Each cookie provides 60mg of magnesium, 16% of your daily reference intake. Magnesium contributes to the normal functioning of the nervous system, normal psychological function and the reduction of tiredness and fatigue.
